It is Week 3 of Whole30!! I stopped counting down the days and decided to live my life on Whole30 without making such a big deal out of it. The last thing I need while planning a wedding is to be stressed about what I can or can’t eat for lunch!
I got some great advice from a reader to not over-think meal times. So this last week, I stopped searching for recipes like a mad woman and decided to just make whatever I would normally make and then tweak the ingredients to match Whole30. For example, I wanted a roasted chicken with roasted veggies for dinner one night and so that is what I made. I know what ingredients I can and can’t use so I can just make adjustments — or when my mom asked what I wanted for my family birthday dinner last Sunday, I said…. Kluski! (if you’ve been reading my blog for some time, you’ll know its one of my absolute favorite side dishes – I even made them with strawberries for a Valentines Day treat!) They are completely WHOLE30 approved – no tweaking necessary — who knew? See what happens when you take it down a notch and just work with what you got #life I do have a confession to make because I want to be totally honest on my blog – N took me out to eat for my birthday last Friday and he did all his research on the Whole30 forums for where to go – We went to Legal Seafood and I got the salmon special. Our waiter was great as I was asking him all sorts of questions. He told me the special is gluten-free and after reading the ingredients, I thought it was perfect! except the pea mash said it had pecorino in it. I thought that was meat!!? HONEST! So, I did have a few bites of it and realized it is cheese #duh — I gave the rest to N and took his veggies. There, I got it out and I don’t feel guilty about it.
I got over my stomach issue that I was experiencing last week. I eliminated some nightshade foods like eggplant, tomatoes, and bell peppers, and spices like cayenne, chili pepper flakes, chili powder, curry, paprika, and red pepper — all of which I has in my meals last week. SO, I could be sensitive to nightshades, but I am not 100% sure.
I can make a lot more of my “normal” recipes without searching for a million recipes online every week — like my birthday dinner that my mom and dad made me! It has always been my favorite and they only had to change the flour in the gravy to potato starch.
I am learning a lot more about what is in food and how my body responds.
The whole family is incorporating more veggies into their meals and I think I can take credit for that 😉
My skin seems brighter!
I still crave chocolate and whipped cream and bread and butter.
My stomach is still not 100% back to normal.
I avoid social situations because I hate turning down shared-appetizers or refusing a drink in front of a group.
I miss just throwing a pizza in the oven and popping open a bottle of wine with N. It was our — we don’t feel like cooking, casual dinner night in — thing.
I did not take great pictures of any of my meals (except that cake up top!! OH MY! SO GOOD! I’ll share the recipe this week) because well I was hungry and just snapped them as is on my cell to share:

I have been playing around with this recipe and adding in whatever fruit I have. Adding a banana defiantly makes it more creamy, oatmeal-like.
Leftover chicken from our Roasted Chicken dinner and I had some of that mayo I made last week – super easy lunchSince it was my b-day week, I wanted something that I was craving!! and it was pancakes and I know the Whole30 rules say NO to recreating things even with approved ingredients — but I don’t care. I wanted pancakes so I made them with Whole30 ingredients and they cured my craving.
I found this accurate description of the first 2 weeks in an article about the Whole30 book.
You might get some of these symptoms when you start the diet:
- Headache, sore, brain fog, general malaise – for a couple of days to several days – adjusting to new foods and going without sugar
- Fatigue, bloating, constipation, diarrhea, crankiness, impatience, cravings, weird dreams – especially in week 2
